Marinated Baked Salmon

This recipe makes a great marinade that is fantastic on many different types of meats. We typically make a double batch and reserve half of it in the refrigerator for up to a week. This is a particularly forgiving way of preparing salmon, and you can marinate them hours ahead if desired. We have used it with great success when grilling for groups of 20-200 people.

Ingredients

1 medium SALMON FILLET (1-1.5 pounds)

2 cloves GARLIC, minced

4 Tbsp OLIVE OIL

1 tsp dried or fresh BASIL (or other herb)

3/4 tsp SALT

1 tsp ground BLACK PEPPER

1 Tbsp LEMON JUICE

1 Tbsp fresh PARSLEY, chopped

Directions

1. PREHEAT THE OVEN
Preheat oven to 375 degrees F.

2. PREPARE THE MARINADE
In a medium bowl, prepare marinade by mixing garlic, olive oil, basil, salt, pepper, lemon juice, and parsley.

3. MARINATE THE FISH
Cut fillet into 4 pieces and place in a bowl or Ziploc bag, and cover with the marinade. Marinate in the refrigerator 30-60 minutes, turning occasionally.

4. PREPARE THE FISH
Place fillets in a glass baking dish, pour in the remaining marinade, and cover with aluminum foil.

5. BAKE THE FISH
Bake 15 to 20 minutes, until easily flaked with a fork. Check for doneness at 15 minutes. If you are pressed for time you can cook the fish uncovered at 425 F. for 10-12 minutes.
